October's here, and cool weather--perfect for mac and cheese--is on the way. This recipe, contributed by Irma Thomas, Grammy winner and Soul Queen of New Orleans, appears in the WWOZ cookbook, That Sounds Good. If you're a fan of cheese, this recipe will sound excellent.
1 box mac and cheese mix, prepared according to package instructions
1/2 cup each shredded mild Cheddar cheese, Pepper Jack cheese and American cheese, or any combination of your favorite cheeeses.
4 eggs (at least)
1 to 2 cups whole milk
1 tablespoon sugar (or to taste)
1/2 cup (1 stick) butter, melted
Combine the mac and cheese, shredded cheeses, eggs, milk, sugar and butter in a bowl and mix well. Pour into a large baking dish. Bake at 350 degrees for 30 minutes. Enjoy!
